Anzac Biscuit Cheesecake Cheesecake: 1kg cream cheese , room temp 50g plain flour 325g caster sugar 200g sour cream 1 Vanilla pod, seeded (use only the seeds) 220g eggs (4 large eggs) 1. Add cream cheese to a stand mixer or mixing bowl and mix on medium speed for 2-3 mins, or until smooth 2. Add in plain flour and caster sugar, mix until incorporated 3. Add in sour cream and vanilla, mix until incorporated 4. Slowly add in the eggs in 3 parts whilst mixing, making sure it’s fully incorporated before adding more 5. Pour into prepared, removable bottom cake tin or spring form. Wrap the tin tightly in foil, leaving the top open then place into a deep baking tray. Fill half way up with boiling water to create a Bain Marie. This will ensure gentle cooking of your cheesecake and won’t curdle the eggs 6. Bake at 175°C for 45 minutes then drop the temp to 165°C and bake for a further 35. You’ll know it’s cooked through when it jiggles in one mass like jelly. If it sloshes around like water, leave it in for another 5-10. It will set whilst it cools Anzac Biscuits: 200g rolled oats 380g brown sugar 320g plain flour 100g desiccated coconut 100g golden syrup 250g melted butter 3 tsp bicarb 2 tbsp water 1. Add oats, brown sugar, plain flour, coconut to a mixing bowl and stir to combine 2. Melt butter and golden syrup together on the stove and bring it to a boil, stirring frequently. 3. Once boiling, turn the heat off and add in the bicarb (baking soda). It will bubble up a lot so make sure the pot is big enough 4. Pour the frothy mixture over the dry mixture and stir together, until there are no dry patches left. It should be crumbly but stick together with pressure, if too dry, add the water 5. If making biscuits, roll into equal sized balls and bake at 180°C for 5 minutes, remove from the oven and press down into shape then return to the oven for another 5-7 minutes or until golden brown. These will brown more as the cool and crisp up #anzacbiscuits #anzaccheesecake #newyorkcheesecakerecipe #baking
