## Caption

We made a Croquembouche!  Little choux buns filled with vanilla crème patissiere, held together with toffee  This has always been one of the recipes that seemed impossible to pull off, so for the longest time I just didn’t even try. I’m really happy that we gave it a crack (no sugar pun intended) because I think it turned out to be pretty great and has filled me with an enormous amount of baking confidence.
