Cajun Chicken Filling - 600g chicken thighs, diced - 2 tsp smoked paprika - 1 tsp cayenne pepper - 1 tbsp garlic powder - 1 tsp dried oregano - 1 tsp dried thyme - 1 tsp ground black pepper - 60g unsalted butter - 1 green capsicum, diced - 1 brown onion, diced - 3 celery stalks, diced - 3 garlic cloves, minced - 1L low-sodium chicken stock - 300ml thickened cream - 100g baby spinach leaves - 1 tbsp cornflour + 2 tbsp water (cornflour slurry) - 1 sheet puff pastry, thawed - 1 egg, beaten (for egg wash) Garlic Mashed Potatoes - 3 brushed potatoes, peeled and chopped into even pieces - 3 garlic cloves, peeled - 1–2 tbsp salt (for boiling water) - 50g cold butter - 50ml milk or cream Cajun Chicken Filling 1. In a large bowl, toss diced chicken thighs with paprika, cayenne, garlic powder, oregano, thyme, and black pepper. 2. Melt butter in a large pot over medium-high heat. Add chicken in batches, sear until lightly browned, then remove and set aside. 3. In the same pot, reduce heat to medium. Add capsicum, onion, and celery. Cook for 5–7 minutes until soft. Add garlic and cook for 30–60 seconds until fragrant, being careful not to burn. 4. Return chicken to the pot. Add chicken stock and cream. Stir to combine. Bring to a low simmer and cook uncovered for 30–60 minutes, or until chicken is tender. 5. Stir in cornflour slurry to thicken the mixture slightly. Add baby spinach and stir until wilted. Remove from heat and allow to cool for 15 minutes. 6. Transfer mixture into an oven-safe baking dish. Cover with puff pastry and trim excess. Press edges to seal. Brush pastry with beaten egg. 7. Bake at 200°C for 10–15 minutes, or until the puff pastry is golden and crisp. Garlic Mashed Potatoes 1. Place chopped potatoes and garlic cloves into a pot. Cover with cold water and season with salt. Bring to a boil and cook until potatoes are soft and easily pierced with a fork. 2. Drain water. Return potatoes and garlic to the pot. Add cold butter, cover with a lid for 1–2 minutes until melted. 3. Mash until smooth. Add milk or cream and whisk for 1–2 minutes to incorporate air and fluff up the mash. #midweekmeals #cajunpotpie #garlicmashedpotatoes #EasyRecipes #simplerecipes #dinnerinspo
