Gently smash the cucumbers with the flat side of a knife, trim the ends, and cut into bite-sized chunks. Sprinkle with 1 tbsp salt, mix well, and let sit for 10 minutes to draw out moisture. Rinse the cucumbers thoroughly, drain, and pat dry with paper towel. In a bowl, mix the cucumbers with soy sauce, rice wine vinegar, sesame oil, grated garlic, chilli crisp, and sesame seeds. Set aside. 2. In a bowl, toss the chicken pieces with MSG (if using), sweet paprika, garlic powder, white pepper, and salt until evenly coated. Add corn flour and toss again until each piece is well coated. Heat a shallow layer of neutral oil in a frying pan over medium-high heat. Fry the chicken in batches until golden and crispy, about 3–4 minutes per side. Drain on paper towel. 3. Drain excess oil from the pan, leaving a small amount behind. Add grated garlic, ginger, and Thai chilli to the pan. Cook for 30 seconds until fragrant. Stir in the honey and bring to a gentle boil. Return the crispy chicken to the pan and toss through the sauce until evenly coated. 4. Spoon steamed rice into bowls. Top with sweet chilli chicken, cucumber salad, kimchi, and a soft-boiled egg sliced in half. #sweetchillichicken #fakeaway #easymeals #EasyRecipes #dinnerinspo
