12 Days of Christmas, Day 9: Pavlova   Ingredients  - 6 egg whites  - Pinch salt  - 270g caster sugar  - 2 tsp corn flour + a little water  - 1 tsp white vinegar  - 1 tsp vanilla  - 300ml thickened cream  - 2 tbsp icing sugar  - 1 tsp vanilla  1. Whip egg white and salt until foamy, slowly add sugar whilst mixing until glossy and white  2. Add corn flour, white vinegar and vanilla, mixing until combined  3. Dump onto a lined baking sheet and mould into a cake shape  4. Bake at 120°C for 1-1.5 hours or until the top has set and it not sticky to the touch. Turn the oven off but leave the door closed to prevent cracking  5. Whip cream with icing sugar and vanilla to stiff peaks  6. Build your pavlova by gently dumping the whipped cream on top of the base and topping with the fresh raspberries, mango, kiwi fruit, blue berries and passionfruit.
