The 12 days of Christmas, Day 8: Roast Chicken Ingredients: - 1 whole chicken - 1 lemon - 1 bunch of thyme, chopped - 3 cloves garlic - 1 tsp black pepper - 2 tsp salt - Lemon rind (from the 1 lemon) 1. Spatchcock your chicken by removing the spine with kitchen scissors starting from the tailbone. Then turn the chicken over and break the breastbone to flatten the chicken out. Cover with salt all over and leave in the fridge overnight. This will help fry out the skin and season the meat 2. Make the compound butter by combining the soft butter, black pepper, thyme, salt, grated garlic and lemon rind in a bowl, mixing well to combine. 3. Take the chicken out of the fridge, pat dry with paper towels to remove any moisture and excess salt. 4. Gently push your fingers under the skin to separate from the meat then fill with half the compound butter, creating an even layer under the skin. Add more butter to the outside of the chicken making sure to cover as much of the chicken as possible. Season the underside lightly with salt and pepper 5. Slice the lemon and lay it down on a lined baking tray. Lay the bird on top, skin-side up, season with a little more salt and roast in an oven set to 210°C for up to an hour or until the internal temperature at the thickest point reaches 70°C #roastchicken #spatchcocking #roastchickenrecipe #christmasrecipes #christmasfoodideas #12daysofchristmas #Foodie
