Date Night Dinners: Duck Ragout 🦆 Ingredients: Ragout- - 4 duck marylands - 1 tbsp duck fat (or any oil) - 2 sticks celery, diced - 1 carrot, diced - 1 brown onion, diced - 6 cloves garlic, minced - 1/2 bunch thyme (1 tbsp dried), chopped - 1 tbsp fresh oregano - 2 tbsp tomato paste - 1 cup red wine - 1 litre chicken stock - 1 tbsp balsamic vinegar - 1/4-1/2 cup Parmesan cheese 1. Season duck well with salt and pepper on both sides and sear until golden brown on medium heat. Remove from the pan and set aside 2. Add in onion, carrot and celery, season lightly with a pinch of salt to draw out moisture and gently sweat for 5-10 minutes until soft and slightly caramelised. Add in garlic and cook off for 30-60 seconds 3. Push everything to the edges to create a hole in the middle and toast off the tomato paste for about 1 minute before stirring to combine. 4. Deglaze the pot with red wine, making sure to scrape all the bits off the bottom of the pot. Bring to a simmer and reduce the liquid by 50% 5. Add in balsamic vinegar, chicken stock and fresh herbs. Stir to combine then evenly place duck into pot. Bring to a simmer then cover with a cartouche (piece of paper with a hole in the middle, reduces evaporation) and a lid, allowing to cook for 2-3 hours on low heat, maintaining the simmer 6. Remove duck from the pot, let it cook slightly (if you’re a coward) and pull the meat from the bones, lightly shredding it 7. Blend the sauce until smooth then add the shredded duck meat and Parmesan cheese, stirring to combine. 8. Add Al dente pappardelle, allow the heat of the sauce to finish cooking the pasta and serve Pangrattato - 50g butter - 1 tsp salt - 1 cup panko bread crumbs - 1/4 cup mixed herbs (basil & thyme) 1. Melt butter on medium heat then add the breadcrumbs, allowing them to absorb the butter 2. Add the salt and herbs, stirring to combine 3. Gently toast the breadcrumbs on medium heat, stirring frequently until golden brown. Remove from the heat and set aside #datenightdinner #duckragu #ragout #ragu #pappardelle #explorefood #asmrcooking #lowandslow #asmr #cooking
