Cheesy Chicken & Pesto Puffs  1. Grate roughly 1.5tbsp of Parmesan cheese (pre-grated works just as well) onto a sheet of baking paper. Followed by chicken, mozzarella and a spoon of pesto. (Measure with your heart for these) 2. Place 1/4 of a sheet of puff pastry on top and mould over the pile, making sure to press firmly down to get a good seal around your cheese  3. Bake in an oven preheated to 200°C/400°F for 20-25 mins or until the pastry is golden brown and you can see the Parmesan cheese is nice and crispy.
