Croque Madame- Recipe Below                                                                 Beschamel: 1 tbsp flour  1tbsp butter  1 cup of milk  Season with salt, white pepper and nutmeg  Slice sourdough, spoon on a generous amount of beschamel. Add ham and fresh grated Gruyère cheese. Place another slice of sourdough on top. Cover with beschamel. Generously cover the top with Gruyère cheese and put under the grill for 5 minutes or until cheese is melted and brown spots form. Alternatively use a gas torch to melt and brown cheese.
