Strawberry Pistachio Ice Cream Mochi  Serves 1  Ingredients: 1 sheet rice paper  2 scoops pistachio ice cream  2 strawberries, chopped  2 tsp icing sugar  1 tbsp chopped pistachios  Method:  1. Soak rice paper in water until soft and malleable.  2. Lay the rice paper onto a wet tea towel.  3. Add the ice cream and strawberries into the middle of the rice paper, then fold into a parcel.  4. Dust the ice cream mochi in icing sugar, then place into the freezer for ten minutes to firm up.  5. Sprinkle with chopped pistachios and serve immediately.  6.
