Apple crumb cake bars🍂🍏🍰 Recipe: Ingredients Crumble Topping -6 Tbsp unsalted butter, cold and diced (85g) -1 cup all-purpose flour (120g) -3/4 cup light brown sugar, packed (160g) -2 tsp cinnamon -Pinch of salt Apple Filling -3-4 Granny Smith apples (about 4 cups, peeled and sliced) -1/3 cup + 1 Tbsp light brown sugar, packed (84g) -1 1/2 tsp cinnamon -2 Tbsp water -2 tsp lemon juice -3 Tbsp unsalted butter (42g) -Pinch of salt -1 1/2 tsp cornstarch mixed with 1 Tbsp water Cake -1 3/4 cups all-purpose flour (210g) -1 3/4 tsp baking powder -1/2 tsp salt -8 Tbsp unsalted butter, softened (113g) -2/3 cup granulated sugar (133g) -3 Tbsp light brown sugar, packed (40g) -2 eggs, room temperature -2 tsp vanilla -1/2 cup sour cream, room temperature (115g) -2 Tbsp milk Instructions For the crumble: 1. Whisk together flour, light brown sugar, cinnamon, and a pinch of salt. 2. Add the cold butter and rub it into the flour mixture with your fingers until it looks crumbly with some bigger chunks. Squeeze the mixture in your hand, then break it apart for larger crumbs. 3. Chill in the fridge while you prepare the filling and cake. For the apple filling: 1. In a saucepan over medium heat, combine apples, brown sugar, cinnamon, water, lemon juice, butter, and salt. Stir until the butter melts. 2. Cover and cook for about 8–10 minutes, stirring occasionally, until the apples are softened but still hold their shape. 3. Stir in the cornstarch mixture. Simmer for 1–2 minutes, until the filling has thickened. 4. Remove from heat and set aside to cool slightly. For the cake: 1. Preheat oven to 350°F. Grease an 8x8-inch square pan and line with parchment paper, leaving some overhang on the sides for easy removal. 2. In a medium bowl, whisk together flour, baking powder, and salt. 3. In a large bowl, beat the butter, granulated sugar, and brown sugar for 2–3 minutes, until light and fluffy. 4. Add the eggs and mix until combined. 5. Mix in vanilla and sour cream until combined. 6. Add the dry ingredients and mix until just combined. Then mix in the milk until just combined. Be careful not to overmix. 7. Spread the batter evenly into the prepared pan. 8. Spoon a generous, even layer of apple filling over the batter. Since the filling makes a little extra, you may have a small amount left over depending on how thick you want the apple layer. 9. Sprinkle the crumble topping evenly over the apples. 10. Place the pan on a baking sheet in case any juices leak and bake for about 65-70 minutes, or until a toothpick inserted into a section of cake near the center comes out clean or with a few moist crumbs. If the top starts browning too much, cover loosely with aluminum foil. 11. Cool for at least 45-60 minutes before lifting out of the pan and slicing. 12. Optional: drizzle with caramel before serving. #apple #coffeecake #bakingrecipe #baking #recipe
