Raspberry crumble cheesecake bars🍰🌷✨ Recipe: Ingredients Raspberry jam -1 1/2 cups raspberries (180g) -1/4 cup granulated sugar (50g) -1/2 tsp lemon juice -1 tsp water -1 tsp cornstarch mixed with 2 tsp water Crust/Crumble -1 1/3 cups all-purpose flour (165g) -3/4 tsp baking soda -1/2 tsp salt -3/4 cup unsalted butter, softened (170g) -1/2 cup granulated sugar (100g) -1/2 cup light brown sugar, packed (106g) -1 1/4 cups oats (123g) Cheesecake -16 oz cream cheese, room temperature -2/3 cup granulated sugar (132g) -2 eggs, room temperature -1/3 cup sour cream, room temperature (75g) -1 Tbsp all-purpose flour -2 tsp vanilla -1/8 tsp salt Instructions For the raspberry jam: 1. In a small bowl mix 1 teaspoon cornstarch with 2 teaspoons water. Set aside. 2. In a small saucepan add the raspberries, sugar, lemon juice, and water. Bring to a simmer, stirring continuously and crushing the raspberries. Once it comes to a simmer, add the cornstarch mixture and continue stirring for about 1 minute. Remove from heat and set aside to cool. For the crust/crumble: 1. Preheat oven to 350°F. Grease an 8-inch square baking pan and line it with parchment paper, leaving some overhang on the sides for easy removal. 2. In a small bowl whisk together flour, baking soda, and salt. Set aside. 3. In a large bowl beat the butter, granulated sugar, and light brown sugar until light and fluffy. 4. Fold in the dry ingredients and oats until the mixture becomes crumbly. 5. Add a little more than half of the crumble mix to your prepared baking pan and gently press it down. Don’t pack it in too firmly or the crust may turn out hard. 6. Bake for 5-7 minutes. Set aside while you prepare the cheesecake. For the cheesecake: 1. In a large bowl beat the cream cheese until smooth. 2. Add sugar and beat until smooth and creamy. 3. Add the eggs and mix until combined. 4. Add sour cream, flour, vanilla, and salt. Mix until just combined. For the assembly: 1. Pour the cheesecake filling over the baked crust layer. 2. Spoon the raspberry jam on top and gently swirl it with a toothpick to distribute it evenly. 3. Sprinkle the rest of the crumble mix all over. For larger chunks, press the crumble together in your hand. 4. Bake for 28-35 minutes at 350°F. The edges should look set, and the center should have a slight jiggle when gently shaken. Let it cool to room temperature and place in the fridge for at least 3 hours so that it sets properly. #raspberry #crumble #cheesecake #bars #baking #recipe #bakingtiktok #bakingvideo #dessert #bakingideas #desserttiktok #foryou #dessertrecipe #bakingtherapy #baketok #fyp
