Replying to @Dee so pho-king easy and delicious #oxtailpho #pho 2 lbs oxtail 2 lbs beef shank 1 large onion 2 inch knob of ginger Pho spice bag mix 2 medium pieces of rock sugar (or 1 Tbsp sugar) 1/2 cup fish sauce 4 liters water Serve with: thin rice noodles, thinly sliced raw beef eye round, bean sprouts, cilantro, green onion, Thai basil, mint, lime Chili vinegar onions 1/4 onion sliced 2 Birds Eye chili 1/2 cup vinegar 1/2 cup boiling water 1 tsp sugar On a sheet pan, put your onion that’s been quartered and skin left on along with your ginger. Put this under the broiler for 10-15 minutes or until charred. In a large pot, parboil your oxtail and beef shank for 5-10 minutes to clean and ensure a clear pho broth. Meanwhile, toast your pho spice mix in a pan until fragrant and slightly darkened. Strain and rinse your meat, add your toasted spices to a spice bag, and peel the skin off your aromatics. To a pressure cooker, add the meat, spices, aromatics and remaining ingredients. Pressure cook on high for 1 hour. Meanwhile, clean up and prepare chili vinegar onions. When the timer is up, safely release the pressure. Remove the meat and set to the side, discard of spices and aromatics and strain your broth. Prepare your bowl of rice noodles, oxtail, sliced beef shank, eye round and fixings then spoon your broth over and enjoy! *if you are cooking over the stove top, simmer on low for at least 4-5 hours, but the longer the better!
