TOM SOUP & 3 CHEESE TOASTIE 🍅🧀 We’re about to embark on a wonderful series together, Soups & Sidekicks. Where I give every bowl of soup the crispy cheesy sidekick it deserves 🦹🦸‍♀️ Any soup requests!?!? Let’s get dunkin’ team!  Ingredients (serves 2-3):  600g tomatoes  1 red onion, roughly chopped  1 red chili, with seeds, sliced lengthways  1 bulb of garlic, whole, tops removed 1 tbsp olive oil  1 tsp dried basil  1/2 tsp dried oregano  1/2 tsp dried thyme  1/2 tsp dried sage (or just use pre made Italian herbs)  Salt and pepper  Fresh basil  2 cups veggie stock (I use @continental stock pots)  1-2 tbsp Tom paste (see note below)  1 tbsp unsalted butter  Top with:  Drizzle cream  Olive oil  Fresh basil  Flaky salt  Toastie:  Sourdough  Aged cheddar (I used messer valley)  Mozzarella  Parmesan  Notes:  - Roast at 180 for at least an hour  - The tomato paste is going to help with richness. I live mine rich so I did 2 tbsp. Start with 1 if you’re unsure.  - Cooking it out will bypass the tartness and allow the sugars to caramelise so it turns sweeter.  - The longer you leave the soup on the stove the richer it will develop.  - Too rich? Add some cream.  - Taste and season 17 if you have to until it’s exactly how you like.  - Incredibly freezer friendly (the soup not the toastie obvi) #tomatosoup #cheesetoastie #soup #soupsandsidekicks #lunchideas #DinnerIdeas #soupideas #souprecipes
