Low-carb, high-protein slow cooked beef bowls (Mad is a lil picky so feel free to boujee these bowls up with your fave toppings). Forever channeling my inner @Andy Cooks when my friends let me stay. Whatever you want, i’ll cook for you babes xx Ideally you want to store the beef separately so the lettuce doesnt go soggy. I just did this for the vid. Slow cooked beef is also a lot easier for our bodies to digest which makes this even better for meal prep. You can also take the slow cooked beef and use it for SO many different recipes. Ingredients: 3 tbsp olive oil 600-750g chuck beef Salt 2 tsp cumin 2 tsp paprika 2 tsp garlic powder 1 tsp onion powder 1 tap oregano (or you can use your fave taco mix) 1/2 cup parsley (stems included) 1 red chili, seeded 2 tomatoes, quartered 1 brown onion, halved 2 beef stock pots Can of diced tomatoes For the bowls: Lettuce Tomato, diced Shredded cheese Sour cream Method: 1. Salt the chuck beef and let it sit and come to room temperature. 2. Pat the steak dry to remove as much of the moisture as possible and cut into cubes. 3. In a crock pot on high heat with olive oil, sear the beef. Do this in batches if need be to avoid overcrowding the pan. 4. Once seared on both sides (the pot I used didn’t retain heat well so pls sear your beef better than I could in this vid xx), add the spices and stir to combine. 5. Add the chilli, tomato, onion, parsley and stock pots then cover with water. Pop the lid on, lower the heat to medium and let it simmer away for 20 minutes. 6. After 20 minutes, sift out the chilli, tomato and onion and place into a blender with 1 cup of the stock from the pot and the diced tomatoes. 7. Blitz until smooth before adding back into the pot with the beef. 8. Stir to combine, lower the heat to low and slow cook for 4 hours or until the sauce has reduced by more than half, is thick and glossy and the beef falls apart easily. 9. Allow the beef to chill before assembling your bowls and you’re good to go for the week! #slowcookermeals #mealprep #lowcarb #highprotein #slowcookedbeef #DinnerIdeas
