The only roast potato recipe you need this Christmas! How many potatoes you use will depend on how many you’re serving so I’m going to jump straight into the method… 1. Preheat your oven to 200 degrees. 2. Bring a large pot of water to a boil and salt heavily until it tastes like the ocean. 3. While you’re waiting for the oven to preheat and the water to boil, peel and wash you potatoes before cutting them into your desired size. The smaller the potato, the quicker they’ll cook and the crispier they will get. The bigger the potato, the longer they will take too cook and the fluffier they will be. 4. Add the cut potatoes into the rolling boiling water and boil until fork tender. Be careful not to over boil them. We don’t want them too soft otherwise they’ll fall apart. 5. While the potatoes are boiling, add enough duck fat into your tray to coat the bottom entirely. 6. Add whatever aromatics or herbs to the fat. This is optional and won’t affect the crispiness of the potatoes, it just adds more flavour. 7. Pop the tray into the oven to heat up. 8. In a mortar and pestle, create a seasoning salt. I used garlic powder, onion powder, ground sage, truffle salt and fresh rosemary and it literally smelt like stuffing, YUM. 9. Once the potatoes are fork tender, drain them and give them a toss around in the pot to break down the exterior. Add a hefty pinch of the salt we just created and give them another lil toss until evenly coated. 10. Once the fat in the tray is piping hot, remove from the oven, remove the aromatics from the fat and carefully pour the potatoes into the fat AWAY FROM YOU. Be careful the hot fat doesn’t splash on you. 11. Toss the potatoes in the fat before popping them in the oven for an hour, flipping every 20 minutes. 12. Finish with another sprinkle of the seasoning salt and enjoy! #roastpotatoes #christmassides #christmasfood #roastpotatoesrecipe #christmascountdown
