Smashed mediterranean tacos. Quick, easy, extremely cost effective and incredibly delicious. Perfect for a mid-week dinner. The sound got removed from the OG vid but I thought these deserved a re-post anyway 🥰 Ingredients for 6 tacos:  6 well-seasoned sausages (lam, feta & rosemary used here) 6 soft taco tortillas  2-3 tbsp olive oil  3 tbsp Greek yogurt  1/2 cucumber  1 garlic clove, minced 1 tomato, diced 1 red onion, thinly sliced Salt and pepper Optional:  1 tbsp white vinegar  1 tsp sumac  Fresh parsley or coriander to serve  Method:  1. Grate the cucumber into a bowl to extract the water.  2. Discard the water from the cucumber before mixing in Greek yogurt, garlic, salt and pepper. If you have lemon juice laying around, I would recommend adding some too.  3. Thinly slice your red onions. I dressed mine with vinegar and sumac but this is totally optional.  4. Dice your tomato and season with salt and pepper.  5. Using a sharp knife, carefully run it down the length of the sausage to break the skin. Remove the skin before smashing the sausage meat onto a tortilla. 1 sausage per tortilla.  6. In a pan on medium heat with a touch of olive oil, place the tortilla, meat side down, and press firmly to achieve a beautiful sear.  7. After a couple of minutes, flip the tortilla and allow the other side to absorb the juices from the meat and crisp up nicely.  8. Once cooked and crispy, finish your smashed tacos with tomato, red onion and sauce (or whatever salad tickles your pickle). 9. Top with fresh parsley or coriander (optional), serve and enjoy!  #smashedtacos #DinnerIdeas #quickmeals #EasyRecipes
