6 hour slow cooked ragu stuffed pasta shells with béchamel. Trust me when I tell you, nothing will compare to this… Ragu is another dish that seems intimating but really isn’t. The prep is soooo easy and uses an incredibly cheap piece of meat. Ingredients: Ragu: 300g jumbo pasta shells 400g chuck roast, cubed 3 tbsp olive oil 1 large onion, finely diced 2 ribs celery, finely diced 1 carrot, finely diced 3 garlic cloves, minced 1 tsp thyme 2 tbsp tomato paste 400ml diced tomatoes 2 stock pots 2-3 bay leaves Salt and pepper Bechamel: 2 tbsp butter 2 tbsp flour 2-3 cups milk Lots of salt to taste Shredded mozzarella Parmesan Method: 1. Pat the beef dry before salting heavily on both sides. 2. In a pot on medium to high heat, sear the beef off on both sides. 3. Once the meat has colour, remove from the pot and lower to a medium heat. 4. Add the mirepoix and saute with salt and pepper until softened. 5. Once softened, add the thyme and garlic and cook until fragrant. 6. Add the tomato paste and cook for 1-2 minutes. 7. Add the diced tomatoes, stock pots and about 1 cup of water. 8. Add the beef back into the pot with the juices ensuring it’s fully submerged in the liquid. Add more water if need be. 9. Stir in the bay leaves, pop the lid on, lower the heat completely and allow to cook for 1-6 hours. You may have to top it up with water every now and then to ensure 1) it doesn’t reduce down into nothing and 2) the beef stays moist and tender. 10. Once finished, use two forks to shred the meat (if necessary). 11. Cook the shells until al dente. 12. In a pan on medium heat, melt the butter before adding the flour and whisking until a dough forms. 13. Slowly add the milk bit by bit adding more milk once the sauce starts to thicken. 14. Salt to taste. Season and taste until you get that zing. 15. Add enough milk until the béchamel is nappe (coats the back of a spoon, not too thick, not too thin). 16. Drain the pasta shells, pop them into a skillet facing upwards, stuff them with the ragu topping the shells with the béchamel sauce and cheese and broiling until melted. #ragu #stuffedshells #DinnerIdeas #pastarecipe #slowcookedragu #bechamel
