20 minute recipes under $20 Ep 10. Crispy ginger glazed chicken. Ingredients for 4: 4 skin on boneless chicken thighs 1/2 cup corn flour 1 1/2 cups rice 2 tbsp oil (olive or neutral doesn’t matter) 1 cup soy sauce 1/3 cup honey 1 tso ginger, grated 2 garlic cloves Optional: Spring onions (to serve) 2 tbsp corn flour mixed with water (cornflour slurry) Method: 1. Wash your rice before adding 3 cups of water and bringing to a boil with the lid on. Once it comes to a boil, lower the heat completely and let sit until you’re ready to serve (do not lift that lid). 2. Season the chicken with a decent amount of salt and pepper on both sides. 3. Coat the chicken with cornflour on both sides. 4. In a pan on medium heat with oil, sear the chicken skin side down first. Cook the chicken completely, flipping once if possible to ensure maximum crispiness. Approx 4-6 minutes on each side depending on the thickness. 5. While the chicken is cooking, prepare your sauce by combing the soy, honey, garlic and ginger. Taste the sauce. Do you like it? Do you want it sweeter? Saltier? Adjust the sauce to YOUR liking. 6. Once the chicken is cooked, remove from the pan and discard majority of the oil. I like to use a paper towel and tongs to do this. 7. Add the sauce to the pan and cook for 2-3 minutes. If you want it thick like a glaze, add a cornflour slurry. 8. Once the sauce is cooked out, add the chicken right before serving to preserve the crispy skin. 9. Serve on fluffy white rice, top with extra glaze and spring onions. Price breakdown: Chicken: $6.84 Rice: $1.40 Cornflour: $2.25 Soy: $1.90 Ginger: $4.40 Garlic: $1.17 Ginger: $1.35 Total: $19.31 = $4.82 per serve #gingerchicken #20minutemeals #quickrecipes #EasyRecipe #cheapeats #cookingonabudget #cheapmeals #chickendinner #DinnerIdeas
