Apricot chicken for 4 under $15. This dish is a prime example of why keeping your essentials stocked is so important. All I needed to purchase for this dish was chicken, apricots in syrup and an onion. Everything else was already waiting for me in the pantry xx  You Americans seem to LOVE this dish so I thought I would see what all of the hype was about. The sweetness of the apricots and caramelised onions is a match made in heaven.  I see Ya’ll using a French onion soup mix for the seasonings and while I’ll allow it, I encourage you to experiment using the spices you already have in the pantry. Because, once you buy them, they’ll be there for you to use multiple times in the future. Remember, becoming an ingredient household is KEY for long-term, sustainable budget cooking, OKAY!?  You can even chuck all of these ingredients into a slow cooker if you’re super lazy and it’ll taste just as good.
