FRIDGE FREESTYLN’ EP.19 @Jonathan Kung  THE DISH: Maple Roasted Hamachi Collar Walnut Miso Pesto Market Salad with Truffled Ginger Green Onion Vinaigrette Spiced Wonton Chips PRIMARY INSPO -Jon Kung is a leader in Third-Culture cooking. Born in LA, raised in HK/Toronto & living in Detroit, it’s about living “between cultures” & thus cooking dishes that fuse & bring these cultures together. It’s inclusive cooking where creativity & allowance brings new flavors. I wanted to take inspiration on this & create a dish that melds a variety of Jons cultural inspo: Chinese, Japanese, Californian, Canadian, Detroit -Just like how Jons cooking is authentic to himself, I wanted to create a dish that was authentically Jon SECONDARY INSPO -Law grad to hosting food pop-ups to modelling & acting.  Jon has many aspects to him & that’s why I wanted to create a dish that had multiple components, each with multiple aspects -JK is not timid or shy about his thoughts/opinions just like his food. It’s bold, daring, strong. Flavors I want to showcase in the dish  -His cookbook Kung Food is beautifully shot & colourful. I wanted to use those colours as inspiration for the colors in the dish -If you get the chance to met Jon, he is so friendly & when we met, he welcomed me like we were brothers. That’s why I wanted to create a dish that was family style. It’s also how we grew up eating. We actually ate the rest of the dish with his partner & dogs Mochi/Boba together as a family.
