FRIDGE FREESTYLN’ EP.14 @Jacky  THE DISH: Ginger Scallion Pizza Bun Flambéed Shrimp Steak Yogurt Cabbage Slaw  Avocado PRIMARY INSPO -Jacky is a self taught cook & last year we got a chance to cook together for an event & he said that he learned so much just cooking with me. When I got to his place, he said he had over proofed pizza dough he was going to not use. I wanted to show him how to be able to use/pivot when a recipe goes wrong -Jacky is very into fitness & has a high calorie expenditure so I wanted to make him something he that would fuel him up post workout or run  but also something handheld for convenience. High protein, easy digestible carbs & good monounsaturated fats SECONDARY INSPO -Jacky is known to rock the signature Naruto apron & loves anime so when  dropped Otaku Hot Girl, it was a perfect match.  -At that time, Jacky’s family just had a barbecue over the weekend & for me BBQ reminds me of grilled steak & the side dish coleslaw so I wanted to incorporate these BBQ elements -I also added the “flame grill” component of BBQ by flambéing the steak -We both love scallion pancakes so I took that & used it as the base inspiration for the flavoring & technique of the pizza bun  -I wanted to show Jacky a cooking technique to incorporate flavor or create “surf & turf” without needing to add actual whole seafood by using condiments like shrimp paste for all that umami.
