Dump and bake is the way to go 🤝  Ingredients:  * 600 g chicken breast * 300 g uncooked basmati rice * 1 red, 1 green and 1 yellow capsicum * 1 onion * mushrooms * 1 tin black beans * Tin corn kernels * Jar enchilada sauce * 400 g crushed tomatoes * Chicken stock  * Paprika, cumin, garlic powder, onion powder, salt and pepper Cover with foil and bake for 45 mins!
