These Ukrainian cabbage rolls have been stuffed with Christmassy flavours, and they accidentally look pretty festive too... Serves 6 Total time: 40 mins Ingredients 8 savoy cabbage leaves 300g minced turkey Half an onion, grated 100g cooked rice 1 medium carrot 2 cloves garlic, grated 1 tsp dried sage 1 tsp thyme 2 tsp cranberry sauce Olive oil to cook Salt and pepper to taste For the tomato sauce: 2 cloves garlic Half a white onion 1 tin chopped tomatoes 1 tbsp butter 1 tsp sugar Serve with 6 tbsp crème fraiche Fresh dill Method 1. Blanch the cabbage leaves in boiling water for 2–3 minutes until pliable. Drain and then dunk in iced water to stop it from cooking further 2. Grate the onion, garlic and carrots 3. Mix the grated veg with sage, rosemary, cranberry sauce, cooked rice, salt and pepper 4. Place a scoop of filling onto each cabbage leaf, fold in the sides, and roll tightly 5. In a small saucepan, heat the olive oil, then cook the garlic and onion for 5-6 minutes on a low heat. 6. Add in the tin of tomatoes, the butter and sugar and let the sauce cook for round 6-7 minutes 7. Add in the cabbage rolls into the sauce and cook in the pan for 12-15 mins until the filling is cooked through 8. Serve with a big scoop of sauce, a dollop of crème fraiche and some fresh dill #Golubtsi #UkrainianFood #CabbageRolls #FestiveRecipes #Turkey
