Top tip: make sure you stand back when cutting in to @georgiahughesfood’s katsu chicken butter Kyiv's 😳 Serves 2 Total time: 50 mins Ingredients For the butter: 4 tbsp salted butter, room temperature 2 tsp curry powder 1 tsp soy sauce 0.5 tsp honey For the Kyiv: 2 chicken breasts 1 egg 60g panko breadcrumbs 4tbsp flour Method 1. Preheat an oven to 200 degrees C 2. Mix up the butter, curry powder, soy sauce and honey. Place in cling film and roll to a rectangle. Place in the freezer for 10 minutes 3. While that freezes, very carefully cut a hole at the thick end of the chicken breast. Using the knife, push through the middle of the breast, careful not to cut all the way through. You want a pocket/hole right in the middle of the chicken 4. Remove the butter from the freezer and cut it into strips 5. Push the sticks of butter through the hole. Top tip! Cut the end of the chicken breast off and use it to plug the hole you created 6. Coat the chicken with the flour, then egg and finally the panko 7. Add 4 tbsp oil to a pan and heat, fry the chicken on each side for 3-4 minutes, then place in the oven for 15 minutes or 12 for a small breast 8. Finish with a pinch of salt and serve with mashed potatoes #chickenkyiv #katsu #comfortfood #chickenrecipe #fusionfood
