Move over turkey, we've got a new festive favourite for you… @whatinthechef’s festive chicken curry’s taking centre stage this season. Serves 4-6 Total time: 1 hour Ingredients 2 tbsp ghee 6-8 tbsp vegetable oil 1 star anise 3 whole cloves 1 cinnamon stick (3 inch) 2 medium white onion, sliced 4-5 fresh sage leaves 3 garlic and ginger blocks 2 large tomatoes, blitzed 1 tbsp tomato puree (optional) 0.5 tbsp turmeric 0.75 tbsp cumin powder 1 tbsp coriander powder 0.5 tbsp chilli powder (or to taste) 2-3 finger chillies green chillies 800g chicken thighs, cut into bite size pieces 1 tsp salt (adjust as required) 250-300ml water 0.5 tbsp garam masala Splash of single cream 1-2 tbsp cranberry sauce To serve Sage leaves Handful of fresh cranberries Method 1. Heat ghee and oil in a pan and fry star anise, cloves and cinnamon for 30 secs. 2. Add sliced onions, sage and a touch of salt. Cook for a few minutes, then add the garlic and ginger blocks. Cook until the onions are softened, stirring often and add a splash of water if needed). 3. Stir in blitzed tomatoes. Cook until the raw smell goes, then add tomato purée with a little water and cook briefly. 4. Add all spices and green chillies (split them if you want more heat). Stir and cook on medium until the oil starts to separate. 5. Add the chicken with the salt. Stir well and cook on high for 2 mins, then cover for 10 mins on medium. Uncover and cook for a few minutes until the masala and the oil separates again. 6. Add 250–300ml boiling water, bring to a boil, cover and simmer on low for 15–20 mins so the spices can cook properly. 7. Uncover, you should see the oil risen to the top. Add in the garam masala and stir it through, then simmer covered for 8–10 mins more. When that’s done, reduce on high until thickened. 8. As it reduces, add cream and cranberry sauce. Stir well and cook a few mins until the masala is thickened and pourable. If you prefer it looser, don’t reduce it as much. 9. Finish with fried sage and fresh cranberries. #pathia #sweetsourcurry #curryrecipe #festiverecipe
