WARNING: This pav bhaji cheese fondue from @whatinthechef might cause your dinner guests to never leave... Serves 8-10 Total time: 35 mins Ingredients 2 medium potatoes, peeled and chopped 0.5 cup green peas 2 tomatoes, finely chopped 1 tsp salt 2 tbsp butter pinch of cumin seeds 1 small red onion, finely diced 4 garlic cloves, minced 1 green bell pepper, finely chopped 1 tsp turmeric 1 tsp chilli powder 0.5 tbsp coriander powder 0.5 tsp garam masala Pinch of fresh coriander 150g cheddar/ mozzarella, grated Bread rolls and butter (for dipping) 1. Start by peeling, chopping, washing, and rinsing the potatoes. Add them to a saucepan along with the peas, chopped tomatoes, and salt. Pour in 250 ml of boiling water, cover, and let everything simmer on low–medium heat for about 20 minutes until the vegetables soften. 2. While that cooks, melt the butter in a separate pan. Add the cumin seeds and let them sizzle for about 20 seconds, then add the red onion and cook for a minute. Stir in the garlic and cook for another couple of minutes. 3. Mix in the finely chopped green bell pepper, add a little more salt, then sprinkle in the spices. Stir and cook for a few more minutes before turning off the heat. 4. Once the vegetables have boiled, lightly break them down with a spatula. Turn the heat back on under the spiced mixture and add the mashed vegetables to it, stirring well. Add splashes of water if it starts to get too thick. Let this simmer gently for 6–8 minutes, then finish with a pinch of coriander. Taste and adjust the salt, then blend the mixture until smooth (you can strain it if you want it even smoother). 5. Stir in the grated mild cheddar and mozzarella until melted and silky. 6. While the bhaji comes together, cut the bread rolls into bite-sized pieces and toss them with some melted butter. Bake them at gas mark 4 until they’re warm and lightly golden. 7. To serve, skewer the toasted bread pieces and dip them into the pav bhaji cheese fondue #CheeseFondueDip #WinterWarmers #PavBhaji #DinnerParty #CheeseRecipes
