@Verna eats food & travels is sharing her secret to getting the flavour of dumplings, without the effort and skill of wrapping Serves: 2 Total: 25 mins Ingredients For the dumpling mix: 150g raw jumbo prawns, roughly minced 200g pork mince 1 egg 100g water chestnuts, finely chopped 0.5 tsp white pepper 1 tbsp light soy sauce 1 tbsp oyster sauce 1 tsp sesame oil 0.5 tsp salt 1 stalk of spring onion, finely chopped 1 clove garlic, grated 1 tsp grated ginger For the soup: 3-4 leaves of Chinese cabbage 1 clove garlic, peeled and smashed 2-3 slices of fresh ginger 1 spring onion, finely chopped 1 tbsp cooking oil 4-5 wonton wrappers, torn into small pieces 1.5 litre of water 4-5 mushrooms 1 tsp salt 1 tbsp fish sauce To serve 0.5 tbsp chilli oil Handful of fresh coriander leaves Method: 1. In a large mixing bowl, combine the minced prawns, pork mince, egg, water chestnuts, white pepper, light soy sauce, oyster sauce, sesame oil, salt, spring onion, garlic, and ginger 2. Mix with a fork or chopsticks in the same direction for 3-4 minutes until well combined and a thick sticky mixture 3. In a large pot, heat 1 tbsp of cooking oil over medium heat and add the smashed garlic, fresh ginger slices, and chopped spring onion. Sauté until fragrant, about 2–3 minutes 4. Pour in 1.5 litres of water, then add the salt and bring the soup to a gentle boil 5. Add the sliced Chinese cabbage and mushrooms and cook for another minute, stirring occasionally 6. Now using a tablespoon, scoop small balls of the dumpling mix directly into the simmering broth. Drop each bit in one by one. Don’t worry if they aren’t perfectly shaped! These are meant to be rustic and broken 7. tear the rice paper in to the broth. They will soften and give a noodle-like texture 8. Cook for around 5 minutes until everything is fully cooked through and the rice paper is tender 9. Ladle the soup into bowls, ensuring each serving gets a good mix of dumplings, rice paper, and vegetables 10. Garnish with fresh coriander and drizzle with chilli oil for a bit of heat and extra flavour if desired #soup #EasyRecipe #dumplingsoup #comfortfood #asianfood
