@whatinthechef’s back turning scraps into snacks...chai doughnut balls, anyone? Serves: 2 Total time: 40 mins Ingredients 100-120g - 4 slices brioche bread (slightly stale if possible) 5 tbsp plain flour 2.5 tbsp milk 1 tbsp sugar 0.75 tsp baking powder 0.5 tsp cinnamon 0.5 tsp cardamom powder Pinch of salt Oil for frying For coating 3 tbsp sugar 0.5 tsp cinnamon + cardamom Method 1. Let the bread sit out uncovered for 1–2 hours. This will prevent overly soggy dough 2. Tear the bread into small pieces and place in a bowl. Add 2 tbsp milk and mash until soft 3. Add the flour, baking powder, spices, and salt. Mix with your hands until a soft, slightly sticky dough forms. At this stage, if it’s too loose or sticky, sprinkle in a bit more flour 4. Cover the bowl and place in the fridge for 10–15 mins to help stiffen the mixture 5. Wet your hands slightly. Divide the dough into 10 equal pieces and roll into balls slightly smaller than golf balls 6. Heat the oil in a small pan over medium heat. Test with a small piece of dough - it should sizzle gently, not burn. Fry the balls in batches, turning often, until deep golden brown (about 3–4 mins per batch) 7. In the meantime, make the spiced sugar mix. While still warm, toss the doughnut balls in the spiced sugar mix until well coated. Optionally serve with a scoop of vanilla ice cream and a drizzle of sauce #chai #baking #doughnuts #easydesserts
