Ex-Bake Off contestant, @nellyghaffar, is back to take on her nemesis, the tarte tatin! This time @Justin is there to make sure nothing happens to her caramel 👀 Serves 8 Total time: 2.5 Hours Ingredients For the pears & caramel: 5–6 semi-firm pears Juice of 1 lemon 1/2 tsp ground cinnamon 100 g granulated sugar 60 g unsalted butter For the rough puff pastry: 200 g strong white bread flour 200 g unsalted butter (very cold) 100 ml very cold water (ideally iced) Pinch of salt For serving: Clotted cream (optional) Method Make the rough puff pastry: 1. Sift flour into a large mixing bowl. Add a pinch of salt and mix lightly 2. Grate the cold butter directly into the flour using a coarse grater 3. Lightly lift and toss the butter shavings with the flour to coat them evenly Gradually add about 80% of the cold water and mix. If the dough feels dry, add a little more water until it comes together 4. Tip the dough onto a floured surface. Bring it together into a ball, but do not overwork it. Seeing streaks of butter is ideal; these help create layers 5. Flatten into a thick rectangle, wrap in cling film, and refrigerate for 20 minutes. 6. After chilling, roll the dough out to 2 cm thick in a rectangle. Fold one third over, then fold the opposite third on top (like a letter). Wrap and chill again for 20 minutes Prepare the pears: 7. Peel the pears, halve them, and remove the cores 8. Squeeze lemon juice over the pears and rub it in with your hands to prevent browning 9. Dust the pears with ground cinnamon and set aside Make the caramel: 10. In an ovenproof heavy-based pan (or use a pan and transfer to an oven-safe dish later), melt the butter over low heat 11. Add the sugar and stir. It may look lumpy or gloopy, this is normal 12. Keep it on a gentle heat until the sugar is fully melted and a light caramel forms 13. Arrange the pear halves cut-side up in the caramel. Simmer on low heat for 30–40 minutes until the pears start to soften. Remove from heat Assemble the tart: 14. Preheat your oven to 200°C (180°C fan). 15. Roll out the pastry into a circle or the shape of your baking dish, leaving about 1 cm extra around the edge. 16. Carefully drain any excess liquid from the pears (reserve this caramel to drizzle over later). 17. Neatly arrange the pears in your baking dish, then lay the pastry over the top. Tuck the edges of the pastry down around the pears and prick the top all over with a fork. Bake the tart: 18. Bake at 200°C for 15–20 minutes, then reduce the temperature to 180°C and bake for a further 30 minutes until golden brown 19. Remove from oven and let it rest for 10 minutes 20. Carefully flip to invert it onto a serving plate Serve: 21. Drizzle with the reserved caramel sauce 22. Add a dollop of clotted cream if desired #tartetatin #pie #gbbo #dessertrecipe #pears
