Beaufiully glazed gulab jamun made from leftover bread?! Only @whatinthechef could pull that off. Watch till the end to see him cry... Served 2-4 Total time: 1h30 mins (inc 1 hour soak time) Ingredients 8 slices of white bread - can be stale! Pinch of baking powder 90ml whole milk 1 cup water 1 cup white sugar 2 cardamom pods, crushed 1 cinnamon stick pinch of saffron (optional) 1 tbsp flaked almonds Method 1. Cut the edges off the bread, then blitz in a food processor until fine. Add to a bowl followed by a small pinch of baking powder and the milk 2. Mix well until a dough is formed. Add more milk as needed. Set aside and allow it to rest for 10 minutes 3. In the meantime, add the sugar and water to a pan and bring it up to a boil. Stir often, then crush and add the cardamom pods and cinnamon stick. Stir through once more and allow this mixture to simmer on low-medium heat for 10 minutes until thickened. Cover and set aside 4. Going back to the dough, pinch a small amount off and roll it into a small ball. Repeat until all of the dough has been used up 5. Deep fry the balls until brown (you may need to batch cook). Add the cooked balls to the syrup you made earlier and mix through. Allow this to rest for at least an hour to let the flavour of the syrup seep into the balls #gulabjamun #indiandessert #indiansweets #breadrecipe #indianfood
