Think you know prawn toast? Think again. @Verna eats food & travels turns it into a Bowlified noodle dream. Serves: 2 Total time: 30 min Ingredients For the sesame prawns 200g jumbo raw prawns, peeled and deveined ¼ tsp salt 1 tsp sesame oil 1 garlic clove, grated Pinch of white pepper 1 egg white 3 tbsp white sesame seeds 3 tbsp black sesame seeds 3 tbsp plain flour Neutral oil, for shallow frying For the noodles 180g egg noodles or ramen noodles 1 garlic clove, minced 1 tbsp oyster sauce 1 tsp rice vinegar 1 tsp sesame oil 1/2 tsp sugar 1-2 tsp chilli crisp or XO sauce (optional) 1 shallot, finely sliced 2-3 handfuls of asian greens (pak choi, chinese leaf cabbage etc) To serve 1 spring onion, finely sliced Crispy shallots or garlic chips (optional) Lime wedges or a drizzle of chilli oil (optional) Method 1. Toss the prawns with salt, sesame oil, grated garlic, and white pepper. Let them sit for 5–10 mins while you prep the noodles 2. Boil according to packet instructions. Drain and rinse under cool water to stop the cooking 3. In a bowl, mix soy sauce, rice vinegar, sesame oil, sugar, and garlic. Add chilli crisp or XO if using 4. Set up three bowls stations Bowl 1: Light flour dusting (plain flour or cornstarch) Bowl 2: Lightly beaten egg white Bowl 3: Mix of white and black sesame seeds 5. Coat prawns in order: Toss in flour, shake off excess. Dip in egg white. Press firmly into the sesame mix, making sure it’s really packed on. 6. Rest the coated prawns for 5-10 minutes before frying to help the coating set and reduces flaking off in the pan 7. In a large frying pan, heat up about 1cm of cooking oil until hot and shallow fry on medium heat. Drain on a paper towel 8. In a separate pan, saute the shallot in a splash of hot oil until fragrant and add in your greens to stir fry for a few minutes until just wilted 9. Toss the cooked noodles back in the pan and pour in the sauce to combine with everything 10. Divide noodles between bowls. Top with sesame prawns, chopped spring onions and crispy shallots for garnish. Serve with lime or chilli oil for extra flavour #prawntoast #prawns #noodlesrecipe #dinnerideas
