Honey-glazed chicken nuggets 🍯  Serves 4 20 Hearty Food Co. frozen breaded chicken nuggets 3 tbsp clear honey  1 tsp Chinese five spice 2 x 250g packs microwave basmati rice 2 tbsp vegetable oil 4 medium free-range eggs, lightly beaten 1 head broccoli, separated into bite-sized florets 100g frozen sweetcorn 2 tbsp reduced-salt soy sauce 6 spring onions, thinly sliced​ 1. Preheat the oven to gas 7, 220°C, fan 200°C. 2. Cook the chicken nuggets according to packet instructions. Mix together the honey and ½ tsp five spice and toss through the cooked chicken nuggets. 3. Cook the rice according to the pack instructions. 4. Heat 1 tbsp oil in a large frying pan over a medium heat. Add the eggs and fry for 2-3 mins, stirring gently until fully cooked. Set aside. 5. Wipe the pan clean and heat the remaining 1 tbsp oil in the pan. Add the broccoli and sweetcorn. Fry for 5-8 mins until piping hot and the broccoli has softened, then add the soy sauce, remaining ½ tsp five spice, rice, eggs and spring onions. Toss together and serve on a plate topped with the chicken nuggets.
