Vegan muffins Makes 8-12 depending on size of the cupcake case  220g self raising flour  200g caster sugar 1/4 tsp bicarb  1/2 tsp salt  240ml soya milk 80ml sunflower oil  2 tsp vanilla essence  **Substitute out 20g flour and add 50g cocoa powder for chocolate muffins**  Method  Mix the dry ingredients together. In a separate jug mix all the wet ingredients together.  Pour the wet into the dry and whisk together until smooth.  Pour into cupcake tins and bake at 160C fan for 20 - 22 mins, or until a skewer comes out clean.  #baking #cakesale
