5 Ways to use up a Glut of tomatoes! Chilli Jam Ingredients: 1kg tomatoes 100g fresh red chilli, chopped (adjust to taste) 2 red onions, diced 6-8 cloves garlic, crushed 30g ginger, peeled & finely chopped 200g light brown sugar 300g caster sugar 2 tbsp apple cider vinegar 2 tbsp Worcestershire sauce 2 tbsp sea salt Method: Wash, core, and roughly chop the tomatoes. Place tomatoes and chilli into a large saucepan over medium heat. Cook for 10 minutes until the tomatoes lose their shape. Add all remaining ingredients. Stir until the sugar completely dissolves. Bring to a boil, then reduce to a simmer. Cook uncovered for about 60 minutes until thick and jammy (liquid should reduce by half). Stir frequently at the end so it doesn’t catch! Pour hot jam into warm, sterilised jars and seal immediately. To make it shelf-stable, submerge sealed jars in a boiling water bath for 10 minutes. Tomato & Basil Sauce Ingredients: 800g of chopped/crushed tomatoes (or use tinned) 50g tomato purée 1 white onion, finely chopped 2 large garlic cloves, crushed 2 tbsp olive oil 30g granulated sugar 2 tbsp dried oregano 1 dried bay leaf 1 small bunch of fresh basil, finely chopped ½ tsp fine sea salt Method: Heat olive oil in a saucepan. Add onions and salt, cooking for 10 minutes until soft. Stir in the garlic and cook for 1 minute. Add the tomatoes, tomato purée, sugar, oregano, and the bay leaf. Simmer gently and uncovered for 20 minutes, stirring occasionally. Remove from the heat and stir through the fresh basil. Cool slightly then blend until smooth with a stick blender. Use immediately, or keep in the fridge for 1 week, or freeze for up to 6 months. What are your favourite ways to cook your tomato harvest?
