Ingredients:
- ¾ lb thinly sliced turnips
- 2.5 lbs thinly sliced Russet potatoes
- 2 tbsp butter
- 3 tbsp minced garlic
- 2 (10.5 oz) cans Campbell’s Cream of Mushroom Soup
- ½ cup 2% milk
- 1 tbsp soy sauce
- 1 tbsp black pepper
- 1 cup chopped toasted pistachios
- 2 tbsp sesame seeds
- 1 tbsp fennel seeds
- 1½ tsp cayenne powder
- Kosher salt to taste
- 2 cups white cheddar cheese, shredded
- 1 cup grated Parmesan cheese
- 1 cup panko bread crumbs

Instructions:
1. Preheat the oven: Preheat your oven to 375°F (190°C). Grease a large baking dish (9x13 inches) with butter or cooking spray.
2. Prepare the vegetables: Thinly slice the turnips and Russet potatoes using a mandolin or sharp knife to ensure even thickness.
3. Make the sauce: In a medium saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
4. Add soup mixture: Stir in the Campbell’s Cream of Mushroom Soup, milk, soy sauce, and black pepper. Let the mixture heat through and become smooth, about 3-4 minutes. Taste and adjust to taste if needed.
5. Toasting the topping: Toast pistachios, then remove and let cool, and repeat with sesame seeds.
6. Assembling the topping: Either chop pistachios by hand or use a mortar and pestle, do the same with fennel seeds, combine with sesame seeds, cayenne and salt.
7. Layer the vegetables: In the prepared baking dish, add a thin layer of sauce, arrange a third of the sliced potatoes and turnips in an even layer. Pour some of the soup mixture over the top and spread it out evenly. Sprinkle white cheddar cheese over the vegetables and dust with the toasted nut crumble. Repeat with the remaining vegetables, soup mixture, and cheeses.
8. Coating the casserole: Add a layer of panko breadcrumbs on top of the casserole but not the nut crumble.
