ok. now these muffins. basically choc chip banana pancakes on the go 🤩 this muffin recipe couldn’t get any easier. simple ingredients so that you can have breakfast (aka best mea of the day) at any part of the day 😌⁣

perfect quick & easy snack if breakfast is your favorite meal of the day⁣⁣
⁣⁣
HOW TO MAKE ↴⁣⁣
- 2 eggs⁣⁣
- 1/2 c nut milk⁣⁣
- 2 mashed bananas⁣⁣
- 1/4 syrup⁣⁣
- 1 tsp vanilla⁣⁣
combine in a bowl. ⁣⁣
⁣⁣
- 1 1/4 c birchbenders pancake mix⁣⁣
- cinnamon⁣⁣
- white choc chips⁣⁣
add mix & cinnamon to wet ingredients. stir until just combined. pour into greased mini muffin tin (or regular muffin tin). full 3/4 full then sprinkle choc chips on top. bake at 350 F for 20-22 mins or until knife comes out clean. remove from tin, let cool, & enjoy :)⁣⁣

** if using regular sized muffin tin, you may need to adjust baking time until golden & done **⁣⁣
⁣⁣
∗∗ substitutions: (ingredients above are recommended, but these subs would work too)⁣
- eggs → flax eggs ⁣
- syrup → pure maple syrup, sugar free syrup, or regular pancake syrup⁣
- syrup → honey or agave⁣
- white choc chips → milk or dark choc chips or chopped up chocolate pieces⁣
