There is pizza, and then there is apizza which is the New Haven-style pizza crispier , charred and dirtier descendant of Neapolitan style pie. The word "apizza" is itself a distinguishing characteristic of New Haven. It’s pronounced “ah-beets”, and it’s derived from the Italian dialect of the Neapolitan immigrants who first settled there.
