## Caption

Tomato and lentil salad 🥗

❤️ Ingredients:
520g tomatoes (mixed or cherry)
100g chopped spinach 
200g cooked green lentils 
Handful of fresh chopped parsley 
2 x handful of fresh chopped basil 
Tsp dried Italian herbs 

Dressing:
Just under 1/4 cup Red wine vinegar 
1/4 cup olive oil 
1.5 tsp Sumac 

❤️ Method:
1. Chop your tomatoes add to a large bowl and season with salt, pepper, one handful of fresh basil and the dried Italian herbs 
2. Chop your spinach and add to the bowl 
3. Mix in your lentils 
4. Put all your dressing ingredients into a jar and shake (or just mix) and add to the salad 
5. serve with the freshly chopped herbs
