## Caption

Super rich lentil bolognese 🍅🌱

❤️ Ingredients:
2 Finely choppedbig carrots or equivalent
1 Finely chopped brown onion
5 Finely chopped cloves of garlic 
2 Finely chopped large celery sticks 
2 Cups chopped mushroom 
1 tin of green lentils 
3 fresh chopped tomatoes 
2 tins of tomatoes 
200ml veg stock 
1 tbl spoon worcester sauce 
The juice of half a lemon
Generous seasoning of salt and pepper 
Tsp dried oregano 
Big bunch of fresh basil leaves (or tbl spoon dried)
Big Tbl spoon of tomato puree

❤️ Method: 
1 - Soften your onions, carrots, celery and garlic 
2 - Add your tomato puree, mushrooms and oregano with a good helping of salt and pepper
3 - Once everything is nicely cooked and soft, stir in your lentils and fresh tomatoes
4 - Add both of your tins of tomatoes and stir in, with your worcestershire sauce and mix
5 - Add the stock and half of the basil and lemon then mix thoroughly then leave to simmer on low-medium for at least 20 mins - until you get a nice thick consistency. (Cook your pasta around about now as per packet instructions)
6 - Serve with the remaining basil on top and enjoy!
