## Caption

Cajun cauliflower tray bake 🍽

💛 Ingredients: 
(Serves 4)

Traybake: 
1 large cauliflower cut into 4 hearty steaks
Chickpeas 
Glug of olive oil
1 Red pepper chopped into big chunks
1 red onion chopped into big chunks
1 courgette thickly sliced
1 sweet potato cut into cubes 
Oil of choice 

Seasonings:
For the cauliflower:
Cajun spice, can purchase already made or as below: 
½ tsp of each: black pepper, cayenne pepper, onion powder, garlic powder, paprika
(Mix this with some oil to make an oily paste to spread over the cauli)

For the veg: 
½ tsp of each: onion powder, garlic powder, salt, pepper, oregano

For the chickpeas: 
Smoked paprika powder

To serve:
Hummus of choice 
Fresh rocket 
Chopped coriander 
Mint yoghurt 

💛 Method:
1 - Preheat the oven to 200
2 - Place all your chopped veg onto the tray and coat with the veg seasoning and some oil. 
3 - Place your steaks on top and coat with the cauli season mix on both sides
4 - Shake up your chickpeas in the smoked paprika and put on top
5 - Put in the oven for 30-40 mins or until golden brown/to your liking.
6 - Plate up with hummus, rocket and a good scattering of yoghurt and rocket.
