## Caption

Sichuan potatoes 🌶

Gluten free 🌾🚫 & Plantbased 🌱

💥Ingredients:

(Serves 2 adjust as necessary)
4-5 potatoes sliced into 1-2 cm slices 
Big table spoon of Sichuan paste 
1 chopped sweet pointed red pepper or bell pepper
5 cloves of garlic minced
2 thumbs of ginger minced
2 tbl spoons of soy sauce 
1 tsp of rice wine or red wine vinegar 
9 spring onions chopped 
Crispy chilli oil to finish - optional 

💥 Method: 
1 - Cook your ginger, garlic and spring onion in oil (leave some spring onion for decoration at the end) on a medium heat for 5 mins. 
2 - Add your Sichuan paste, soy sauce, vinegar and mix 
3 - Season your potatoes with plenty of salt and pepper and add your potatoes evenly, cook these as you would sautee potatoes. Use the lid to speed up the cooking process but allow enough time with the lid off to get a nice golden colour on the potatoes.
4 - When the potatoes are half way through add your peppers.
5 - Continue to cook untl the potatoes are cooked and have a nice colour each side. 
6- Serve with a sprinkle of spring onion, salt and pepper and crispy chilli oil if you’re feeling brave! 😋
