Welcome to episode 3 of my fiver friday mini series! 😋

Presenting this one pot, plantbased - “cheesey” orzo and greens! We absolutely LOVED this dish, it’s so blummim good! Tasty, comforting but still quite light. And as always packed with plants and goodness. 🌱

💛 Ingredients:
Groceries:
(prices from Asda, as of 11th April)
400g Orzo - 0.75
50g nutritional years (more if you like is super cheesy) - 1.75
1 Courgette cut into small cubes 0.56
Half a bag Spinach - 0.50
Cup of Peas - 0.20
1 chopped brown onion - 0.33
4 large minced Garlic cloves - 0.13
👛 Total cost: £4.22

Cupboard:
Tsp of italian herbs or basil or oregano
salt and pepper
500 ml Veg stock (use two cubes for extra oumph)
A little oil

💛 Method:
Soften your chopped onions in a little oil on medium heat. Once soft add your garlic, herbs, some salt and pepper, mix. Then add your courgette and mix. Once courgette has softened add your orzo and stock and leave to simmer for 10 mins. Add some more salt and pepper and peas. After 2 mins and your nutritional yeast, stir well and add your spinach, simmer for a hot minute. Once the spinach is wilted nicely serve and enjoy! 💋
