## Caption

Walnut and sundried tomato pasta 🍝🥜🍅

Ready in 30 mins or less, this is so quick and easy, perfect for a midweek meal! 💨

💛 Ingredients: 
120g of walnuts 
Whole jar of sundried tomatoes 
Handful of basil (or tsp of dried)
Juice of one lemon
4 cloves of garlic
25 ml Olive oil 
Tablespoon tomato paste 
3 tbl spoons Nutritional yeast or Parmesan 
Pasta of choice to serve 4

💛 Method:
Put your pasta onto a boil as per package instructions.
Blitz together your walnuts, garlic, olive oil, a third of the sun dried tomatoes (save some for decorating), half the basil, big squeeze of lemon, NY/Parmesan and plenty of salt and pepper. 
Once blitz add to a frying pan on a low heat, before draining pasta add half a cup of pasta water (more if desired) to the frying pan and mix. 
Drain the pasta, add to the pan, coat in that lovely sauce and serve. 
Serve with extra sundried tomatoes, basil, salt, peppers and more big squeezes of lemon!
