Perfect for winter! ❀️ β–ͺ️ Ingredients: 600g of mushrooms (like 3 packs, i know!) 6 chopped shallots 4 garlic cloves (chopped) Heap tsp yeast extract or miso Carrots chopped Tbl spoon cornflour Big blob of Tomato puree Thyme (or mixed herbs) 250 ml Veg stock or meatless beef oxo 300 ml red wine β–ͺ️ Method: Saute shallots in oil or butter for 5-6 mins until soft, add the carrots and garlic, cook for a further 5-6 mins then add tomato puree and cornflour. Stir well for 1 min then add the wine, leave to simmer for 5-6 mins then add the stock and herbs, simmer for around 10 mins. Whilst thats simmering, cook the mushrooms in a separate pan, sautee in the yeast extract, and a little oil (or water for healthier option.) One cooked add the mushrooms to the sauce and simmer on low for around 20 mins. πŸ˜‹ Serve with sweet potato mash and greens for that extra fibre hit, or a big hunk of bread if ya like!
