Dairy free πŸ₯›πŸš« Gluten free 🌾🚫 Vegan/Veggie option 🌱 High fibre πŸ’› πŸ”Έ Ingredients: 4 Large sweet potatoes Turkey or vegan mince Chicken or veg stock 2 tbl spoons of cornflour Tbl spoon of Mixed herbs 2 leaks Mushrooms 4 garlic cloves (chopped) πŸ”Έ Method: - For the filling: Brown the mince in a non stick pan Set aside mince and in the same pan add the leaks and chopped garlic, sautee until soft then add the mushrooms. Return the mince to the pan Add the cornflour, herbs, salt, pepper and mix through Add the stock Leave to simmer for 25 or so, until you get the right consistency. - For the top: Microwave sweet potatoes for around 8 minutes each or bake for 40 minutes in the oven. Scoop out flesh mix with salt, and pepper and layer on top! Cook in the oven on 200 for 40 mins until the top layer is how you like it. What dish would you like to see made healthy?
