Sweet potato & flaxseed falafel 💛

Gluten free, fat free and high in protein!

These turned out amazing so I couldn’t not share with you! 😋

🔸 Ingredients:
3 small sweet potatoes 
One tin of butter beans 
2 garlic cloves 
Cumin 
Corriander 
Mint 
Parsley 
Flaxseeds (optional)
A lemon 

(Preheat oven to 200 with baking try inside if using the oven - air fryer works better though if you have one)

Put the sweet potatoes in microwave until fully soft (about 12 mins) 

Roughly wizz the butter beans, flaxseeds, garlic, herbs, spices and juice of half a lemon in blender - not puréed, can be as corse as you like.

Mix sweet potato in with the blitz beans. Add the zest of half a lemon and plenty of salt and pepper. 

Roll into wee balls and put on the hot tray (or use parchment paper/oil if not non stick) into the oven for 12 mins, then turn and then another 12 mins (longer if you like them crispy)

Or air fryer 20 mins turning half way through 

These are great to batch cook and take to work or have for lunch! 🍽
