Spicy fried rice in a pineapple anyone? 😄🌶 Sure saves on the washing up!

Snuggled up inside is spicy vegetable (aubergine, pineapple, red pepper & sweetcorn) fried rice with chipotle pulled chicken.

Safe to say Carlo thought I lost the plot when I presented him with this for dinner last night 😂 - check out my stories to see his reaction.

I had something similar when I lived in Thailand and loved it, so created my own version. 💜

- What dish holds fond memories for you?
