Nonno’s left over chicken soup! ❤️

For anyone having a chicken Sunday dinner today, this one is for you this week!

I got this recipe from my partner’s Italian father, it’s so delicious & simple, plus it helps reduce food waste!

💛 Take your left over chicken (whole) and put it in a large pot with rich chicken stock which covers the chicken (we use around 2 chicken stock pots)
💛 Cook on low for around 1.5 hours.
💛 Remove the bones and add chopped onion, garlic, carrots, salt, pepper & thyme - at this stage you can add any veg you like. Sometimes I add mushrooms, sweetcorn or spinach if it’s in the house.
💛 Cook for a further 1.5 hours.
💛 Towards the end add chopped spaghetti, timing depending on packet instructions.
💛 Serve with Parmesan on top.
- Topped with rocket/crusty bread optional but delish! 🥰
- lots of black pepper too obvs!

Who says soup has to be boring! 😃
