Spicy BBQ pulled Jackfruit with beans & peppers 😍

Today’s lunch was spicy BBQ Jackfruit made with white kidney beans, garlic & peppers. With kale and mashed sweet potato.

🧡 For the BBQ Spice mix:
Table spoons of: Paprika, onion powder, garlic powder, brown sugar, chilli powder. Also add tea spoons of salt and black pepper and mix together.

🧡 Method:
Fry the garlic and peppers in a little olive oil (if you like onions add chopped red onion at this point too), add a tbl spoon of tomato purée.

Once softened add the beans of your choice & pulled jackfruit (I used aldiuk young tinned jackfruit) - mix everything together then add the spice mix, mix together and add the juice of half a lime.

🧡 I served mine with mashed sweet potato, kale and added extra chipotle sauce & jalapeño - Delicious!

Jackfruit is a great meat alternative if anyone is trying to cut down or experiment. Have you tried? 😋
